Hemp hearts breakfast bowl
Yields 1 serving. Prep 5 minutes.
- 1 cup plain Greek yogurt
- 3 tablespoons hemp hearts
- 1/2 cup mixed berries
- 1 tablespoon honey or maple syrup
- 1 tablespoon chopped almonds (optional)
Method: Layer yogurt, hemp hearts, berries, and a drizzle of honey in a bowl. Approximately 28 grams of protein per serving, 380 calories. A complete breakfast in under five minutes.
Hemp hearts pesto (no cheese version)
Yields about 1 cup. Prep 8 minutes.
- 2 cups fresh basil leaves, loosely packed
- 1/2 cup hemp hearts
- 2 tablespoons nutritional yeast
- 2 cloves garlic
- 1/2 cup extra-virgin olive oil
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
Method: Combine all ingredients in a food processor and blend to a chunky paste. The hemp hearts substitute for pine nuts at a fraction of the price and add protein. Use on pasta (off heat, stirred in after draining), as a sandwich spread, or drizzled on roasted vegetables. Keeps refrigerated for one week.
Hemp hearts energy bites
Yields 16 bites. Prep 15 minutes plus chilling.
- 1 cup rolled oats
- 1/2 cup natural peanut butter
- 1/3 cup hemp hearts
- 1/4 cup honey
- 1/4 cup ground flaxseed
- 1/3 cup dark chocolate chips
- 1 teaspoon vanilla extract
- Pinch salt
Method: Combine all ingredients in a bowl and mix until uniform. The mixture should hold together when pressed. Roll into 16 balls. Refrigerate 30 minutes. Keeps refrigerated one week or frozen three months. Approximately 4 grams of protein per bite, useful as pre-workout snacks or for kids' lunches.
Substitution notes
For nut-free versions, replace peanut butter in the energy bites with sunflower seed butter and omit almonds in the breakfast bowl. For vegan versions, use plant yogurt and maple syrup in place of honey. The pesto is already vegan as written.
Storage
All three recipes refrigerate well. Energy bites freeze. The pesto can be portioned into ice cube trays and frozen for individual use. None should be heated significantly during preparation or service; the hemp hearts in each are best preserved at room temperature or below.
